Thai Tofu Noodle Soup with Lemongrass

This is a simple recipe and It is a great natural remedy if you are fighting a cold or flu bug, it will boost your mood too.
dried Thai rice noodle: 10 oz
minced lemon-grass: 2 stalks
vegetable: 6 cups
ginger, thinly sliced into matchstick pieces: 1 tablespoon
soft tofu, drain off the water and slice tofu into cubes: 1/2 package
broccoli, chopped: 1 head
Chinese cabbage, chopped: 2 cups
carrots, sliced: 2
soy sauce: 4 tablespoon
good-quality coconut milk: 1/2 can
lime leaves: 2 cups
fresh basil, roughly chopped: 1/2 cup
Dunk noodles in a pot of boiling water and turn off the heat.Place stock in a soup pot together with lemon-grass, plus ginger, whole lime leaves, and carrots. Bring to a boil, then reduce heat to medium. Allow to simmer while you chop up and add the remaining vegetables. Simmer until vegetables have softened but are still bright in color (about 5 minutes).Reduce heat to minimum and add the coconut milk, stirring to dissolve. Finally, add the tofu, gently stirring so it doesn't fall apart.Add the soy sauce.Check rice noodles to make sure they have softened enough to eat. Drain the noodles and portion out into bowls. Pour several ladles of soup over each bowl of noodles. Sprinkle over fresh basil, and serve it. ENJOY!
