Beef brisket is a less tender cut, but with the right recipe, it becomes a hearty meal.
olive oil: 1/4 cup
minced garlic: 4 teaspoons
minced onion: 4 teaspoons
minced parsley: 4 teaspoons
bay leaf: 1
ground coriander: 1 teaspoon
crushed red pepper: 1 teaspoon
sweet potatoes, peeled and rough chopped: 4
russet potatoes, peeled and rough chopped: 4
water: 1 cup
red wine: 1/2 cup
prepared corned beef brisket, brined in apple cider vinegar and seasoned with salt, black pepper, paprika, garlic and onion: 3
pasta: 16 ounces
salt: 1 teaspoon
ground black pepper: 1 teaspoon
Place olive oil in a crock pot with garlic, onion, parsley, bay leaf, coriander and red pepper, cook on high for 3-4 minutes. Add sweet potatoes, russet potatoes, water and wine. Center brisket on top of potatoes. Arrange uncooked pasta around the brisket. Add salt and black pepper; continue to cook on high for 30 minutes. Reduce heat to low and cook for 2 hours. Remove brisket to rest for 10 minutes before slicing. Stir the potatoes and pasta, and leave in crock pot on low heat until ready to serve. Plate, garnish and serve.
