Prep time: 35 min Cook time: 5 min Total time: 40 min Yield: 4 servings Sometimes the best approach is the simplest one, as in this mix of chicken, mayonnaise, almonds and celery. Use herbed chicken for extra flavor. Ingredients: Diced Poached Chicken: 4 Cups Celery: 1 Stalk Mayonnaise: 1 Cup Mustard: 1 Teaspoon Salt: Pinch Black Pepper: Pinch Lemon Juice:1/4 Cup Chopped Parsley: 2 Tablespoons Scallions: 4 Chopped Tarragon: 2 Teaspoons Directions: In a mixing bowl, toss together the chicken, celery, scallions and herbs. Set aside. In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
